AiBi Starter Cultures for Natural Yoghurt

Natural yoghurt, as any other natural product, is more wholesome than yogurt with various food additives. Yoghurt made only from natural ingredients will suit both adults and children. However, natural yoghurt is more difficult to cultivate that yoghurt with fruit fillers as natural yoghurt is free from food additives – granulated sugar and fruit fillers that soften the product’s flavor making it less sour as well as stabilizers that make product’s texture more solid and allow to preserve it in the process of prepacking and transportation.

At the dairy, they successfully produced natural yoghurt with AiBi starter LbS 22.11 R5. The results of product tasting showed a solid texture and a bit viscous body capable of restoring itself after prepacking. The flavor profile of the final product is different from that of yoghurt made with another starter thanks to a gentle, softened sour-milk flavor with a refreshing touch and low post oxidation.
