The production process of a series of strains for starterl cultures AiBi ® Golden Time  is based on the accelerated process of the biomass concentration after cultivation, that helps to stop fermentation process at the peak of biomass growth for the shortest possible lag phase in the product during the subsequent fermentation process

Short lag phase ( from 30 minutes)  and additional processing  for selected strains of lactic acid bacteria helps to:

-  eliminate the risks of foreign microflora development during the first few hours of

    fermentation process due to adaptation phase reduction

     stabilize the fermentation process as starter  cultures  can overcome lactic

    environment buffering faster, when  salts - stabilizers are used
